Quickie post today because when you want dessert... you want it like right now. AmIrightoramIright??? So without further ado, here is my recipe for a Summerlicious Berry Fruit Salad that can pass as dessert even for someone with a major sweet tooth! It's my fave summertime treat because it's decadent BUT healthy and so fresh! Aaaaand it's super easy.
One 16 oz. package fresh organic strawberries
One 6 oz package each of fresh raspberries, blueberries, and blackberries. I cut the strawberries into bite size pieces.
One quarter of a watermelon, cubed. I don't use the entire quarter, but you can adjust to your taste!
Fresh squeezed juice from 1 organic lemon
4 - 6 chopped dates (to taste)
Chopped fresh basil (to taste)
Mix all ingredients together and chill for a bit to let flavors mix. You can eat as is (which is what I usually do), or top with shredded coconut or cacao nibs. Or if you're REALLY feeling adventurous, a scoop of @lunaandlarrysCoconut Bliss vegan ice cream. YUM!!!
