Simply Shakshuka: Your New Breakfast Bestie

Shakshuka is a savory dish of Moroccan amazingness that you should definitely be adding to your breakfast rotation. I love this dish because it is a blood sugar balancing, protein rich, and delicious way to start the day. So what exactly is Shakshuka? Simply put, it's a dish of eggs poached in a tomato sauce with garlic, chili peppers, onions, and other spices.  This dish is a great way to get some extra choline in your diet (a super important nutrient during pregnancy, and one that a lot of women are deficient in) from the eggs and spinach. This version also uses a pre-made Shakshuka sauce (sugar free) to keep meal prep to a minimum.  Full recipe is listed below, but FIRST THE IMPORTANT THINGS: What 90's/early 2000's show have I been re-watching with the hubs???
Omg guys, my hubby never watched Friends!  The horror.  When I found this out, we decided to start watching it together, and I'm so glad we did!  There's just something about that show - no matter what stage of life I'm in, there is always something I relate to. We just watched the episode where Rachel "wakes the baby" and I definitely related to that one LO!. Also, the one where Joey thinks he speaks French KILLS ME.  Besides being funny, the show just resonates.  Anyone else feel that way about Friends? Maybe it's just a good dose of nostalgia, but I've been loving every minute of my re-watch.

On to the Shakshuka!

Ingredients:
  • 6 organic pasture raised eggs
  • 1 - 2 Tbsp avocado oil (to taste)
  • One 16 oz. jar Mina Shakshuka sauce
  • 1/2 cup water
  • Heaping 1/2 cup halved organic grape tomatoes
  • 2 large cloves garlic
  • 1/2 organic onion, chopped 
  • 1 extra large handful of organic spinach

Place avocado oil in a large skillet over medium heat.  Add onions and saute for about 5 minutes, or until the onions become translucent.  Add garlic and tomatoes and cook for an additional minute.  Add shakshuka sauce and 1/2 cup water and bring sauce to a simmer.  Use a large spoon to make  wells for the 6 eggs, and crack eggs into wells.  Cover and cook for 6 minutes (or longer depending on how runny you like your yolks).  Remove from heat, season with salt and pepper to taste, and serve with avocado on the side.  Enjoy!

I never watched friends either until I started dating my girlfriend and you are so right about the show resonating. It’s the same way I felt and still feel about New Girl lol.
